Grate the potatoes on the largest holes of a grater.
Place the grated potatoes in a colander and remove excess water. Then place on a kitchen towel or paper towel, bundle it up and squeeze to remove as much moisture as possible.
Transfer the potatoes to a plate lined with paper towels and cook in the microwave for a minute.
Mix in a teaspoon of salt, a teaspoon of crushed black pepper, two teaspoons of corn flour and one minced garlic clove to the grated potatoes.
Make patties of desired shape. You can stuff mozzarella cheese in between two patties for cheese hash browns.
Heat two tablespoons of oil and two tablespoons of butter or ghee in a pan. Once the pan is hot, carefully place the patties in the pan and fry until each side turns golden brown.
Serve the hash browns hot with a side of your favourite breakfast dishes like scrambled eggs, sausages, or even some fresh fruit.
