You can replace with oats

Popping Amaranth seeds before using gives a nutty flavour to the soup.

1 cube vegetable stock can be used instead

Instructions
Add 2 Tablespoon of oil to a soup pan
Stir in minced garlic, beans, carrots, and potatoes one by one. Gently toss for 2 minutes in high flame.
Add Barley flakes and popped Amaranth seeds,
followed by 3-4 Cups of water
Now add vegetable stock or cubes and stir to combine.
Sprinkle some black pepper and salt
Cover and cook on low flame for 5-7 minutes.
Squeeze fresh lemon and turn off the flame.
Garnish with ginger and herbs of your choice.
