1 cupChopped nutsI used almonds, you can use walnuts, pecans, or cashew nuts as per your preference
1/4cupUnsalted butter
1/4cupHoney
1/4cupBrown sugar
1/2tspVanilla extract
1/4tspSalt
1/2cupDried fruit(e.g., cranberries, raisins, dates) If you are using dates or raisins reduce the quantity of sugar.
1/2cupMini chocolate chips(optional)
Instructions
Toast the Dry Ingredients: Spread oats and chopped nuts on a baking sheet and toast them in the air fryer for about 10 minutes, stirring halfway through, until they are lightly browned. This enhances their flavor and helps the bars hold together better.
Prepare the Binding Mixture: In a saucepan over medium heat, combine the butter, honey, and brown sugar. Stir continuously until the mixture comes to a gentle boil. Let it simmer for about 2 minutes, then remove from heat and stir in the vanilla extract and salt.
Combine Ingredients: In a large mixing bowl, combine the toasted oats and nuts with the binding mixture. Stir well to ensure everything is evenly coated, then fold in the dried fruit and mini chocolate chips (if using).
Press into Pan: Line an 8x8-inch (20x20 cm) baking dish with parchment paper. Transfer the mixture into the dish and press it down firmly to create an even layer. Using the back of a spoon or a piece of parchment paper can help press it down evenly.
Chill and Set: Let the bars chill for at least 2 hours. This allows the bars to set properly.
Cut into Bars: Once set, lift the mixture out of the dish and place it on a cutting board. Use a sharp knife to cut it into bars of your desired size.
