Instructions
Grate mango and add vinegar and rock salt.
Dry roast fenugreek and cumin seeds
Dry grind fenugreek and cumin seeds
Coarse grind garlic
Heat oil in a pan and temper with mustard seeds, curry leaves, red chillies followed by ground spices.
Add chili flakes, turrmeric powder, ground garlic, chilli powder, asafoetida, salt. Cook until the smell of garlic is gone for around 5 minutes.
Cool pickle mix completely before mixing with mango.
Spoon mango pickle in a clean, dry ceramic or glass jar.
