Instructions
Chicken marinade
Place chicken in a large bowl. Add soya sauce, paprika powder, garlic powder, oregano, salt. Keep it covered in refrigerator for 30 minutes.
Frying chicken
Mix together corn flour, plain flour, black pepper powder, salt in a shallow bowl.
Whisk eggs in another shallow bowl.
Coat chicken pieces in dry flour mixture. Shake off any excess flour.
Dip chicken in whisked eggs
Give a second coating to the chicken pieces with flour mix to form a thick crust.
Fry in hot oil until crispy golden brown usually in 6-7 minutes.
Dynamite Sauce Preparation
Prepare dynamite sauce by whisking together Mayonaise, siracha, chili garlic sauce, ketchup, lemon juice and honey.
Presentation
Toss chicken in prepared sauce until coated well.
Layer lettuce in martini glasses, followed by dynamite chicken.Garnish with chopped spring onions.
