Instructions
Chicken Marinade
In a large bowl marinate chicken with buttermilk or curd, salt and pepper. Overnight brining chicken in buttermilk or atleast minumum of 4 hours will make the chicken juicy and tender.
Dry Mix
Whisk together plain flour, corn flour, black pepper powder, chilli powder, paprika powder, ginger powder, garlic powder, oregano, salt with plain soda and water
Egg mix
Prepare egg mixture by beating eggs with salt together.Eggs will help the flour stick better.
Dry mix
Combine plain flour, corn flour and salt.
Preparation
Dip marinated chicken pieces first in wet flour mix then in egg mix and again in dry flour mix. Press firmly so that the flour adheres well to the chicken.
Fry chicken in batches. It will take around 15 minutes for each batch.
Place on a rack. Repeat the same process to other pieces.
