Soft and Chewy Homemade Granola Bars

I’m finally back to blogging after what feels like forever, and I couldn’t be more excited to share this simple yet satisfying recipe with you all. Life got busy, priorities shifted, and the creative spark took a turn in a different direction—but here I am, starting fresh with something wholesome, comforting, and delicious. These soft and chewy homemade granola bars are the perfect recipe to kick things off again. They’re easy to make, taste incredible, and are packed with just the right balance of oats, nuts, sweetness, and love. Whether you’re meal-prepping, packing snacks for the week, or just want a guilt-free treat, this one’s a keeper.

Oats Almond Granola bar

Course Snack

Ingredients
  

  • 2 cups Oats
  • 1 cup Chopped nuts I used almonds, you can use walnuts, pecans, or cashew nuts as per your preference
  • 1/4 cup Unsalted butter
  • 1/4 cup Honey
  • 1/4 cup Brown sugar
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Salt
  • 1/2 cup Dried fruit (e.g., cranberries, raisins, dates) If you are using dates or raisins reduce the quantity of sugar.
  • 1/2 cup Mini chocolate chips (optional)

Instructions
 

  • Toast the Dry Ingredients: Spread oats and chopped nuts on a baking sheet and toast them in the air fryer for about 10 minutes, stirring halfway through, until they are lightly browned. This enhances their flavor and helps the bars hold together better.​
  • Prepare the Binding Mixture: In a saucepan over medium heat, combine the butter, honey, and brown sugar. Stir continuously until the mixture comes to a gentle boil. Let it simmer for about 2 minutes, then remove from heat and stir in the vanilla extract and salt.​
  • Combine Ingredients: In a large mixing bowl, combine the toasted oats and nuts with the binding mixture. Stir well to ensure everything is evenly coated, then fold in the dried fruit and mini chocolate chips (if using).​
  • Press into Pan: Line an 8×8-inch (20×20 cm) baking dish with parchment paper. Transfer the mixture into the dish and press it down firmly to create an even layer. Using the back of a spoon or a piece of parchment paper can help press it down evenly.​
  • Chill and Set: Let the bars chill for at least 2 hours. This allows the bars to set properly.​
  • Cut into Bars: Once set, lift the mixture out of the dish and place it on a cutting board. Use a sharp knife to cut it into bars of your desired size.​
