Spicy and Crispy Dynamite Chicken Recipe for a Flavor Explosion

Dynamite Chicken has gained immense popularity in recent years due to its perfect combination of crispy fried chicken and spicy mayo sauce. Although originating in Japan and popularized by PF Chang’s restaurant, it has become a favourite in many parts of the world, including India.
To suit the Indian palate, this recipe has been slightly tweaked and can also be made with prawns or vegetable dumplings. First, marinate the chicken in a mixture of soya sauce, paprika powder, garlic powder, oregano, and salt for 30 minutes. This infuses the chicken with flavour and ensures that it stays moist and tender when fried.
Next, coat the chicken in a batter made of plain flour, corn flour, black pepper powder, and salt, followed by a dip in a beaten egg mixture. This creates a thick crust that becomes perfectly crispy when fried in hot oil for 6-7 minutes.
Dynamite Sauce
The star of the dish is the dynamite sauce, made by whisking together mayonnaise, sriracha, chili garlic sauce, tomato ketchup, lemon juice, and honey. It is spicy, tangy, and slightly sweet, perfectly complementing the crispy chicken.
To serve, toss the dynamite chicken in the prepared sauce until coated well. Place it on a bed of lettuce and garnish with chopped spring onions. This visually appealing dish is as delicious as it looks and will leave you craving more.

Ingredients
Chicken marinade
- 1/2 kg Chicken boneless cubes
- 1 Tablespoon Soya sauce
- 1 Tablespoon Paprika powder
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Oregano
- Salt
Flour dip mixture
- 1/4 Cup Plain flour / Maida
- 1/4 Cup Corn flour
- 1 Teaspoon Black pepper powder
- Salt
- 1 Egg well beaten
- Oil For frying
Dynamite Sauce
- 4 Tablespoon Mayonaise
- 4 Tablespoon Siracha or chilli sauce
- 2 Tablespoon Chilli garlic sauce or chilli sauce
- 1 Tablespoon Tomato ketchup
- 1 Tablespoon Lemon juice
- 1 Teaspoon Honey
Garnish
- Spring onions
- Lettuce for serving
Instructions
Chicken marinade
- Place chicken in a large bowl. Add soya sauce, paprika powder, garlic powder, oregano, salt. Keep it covered in refrigerator for 30 minutes.

Frying chicken
- Mix together corn flour, plain flour, black pepper powder, salt in a shallow bowl.

- Whisk eggs in another shallow bowl.

- Coat chicken pieces in dry flour mixture. Shake off any excess flour.

- Dip chicken in whisked eggs

- Give a second coating to the chicken pieces with flour mix to form a thick crust.

- Fry in hot oil until crispy golden brown usually in 6-7 minutes.

Dynamite Sauce Preparation
- Prepare dynamite sauce by whisking together Mayonaise, siracha, chili garlic sauce, ketchup, lemon juice and honey.

Presentation
- Toss chicken in prepared sauce until coated well.

- Layer lettuce in martini glasses, followed by dynamite chicken.Garnish with chopped spring onions.
