How to make Falooda Restaurant Style

Falooda, a well-known Indian dessert, is made with Sev or Vermicelli, Rose Syrup, Basil seeds, Milk, and ice cream on top. Pour rose syrup on the sides of the glasses and keep them in the freezer for 5-10 minutes to get a cool look. Also, prepare everything beforehand and keep it in the fridge. Assemble it just before serving.
For Ice Cream Falooda, boil vermicelli in water for 5 minutes and rinse it in cold water. Soak Sabja seeds in water for around 30 minutes and drain them once a gelatin-like coating has formed around them. Whisk together cold milk and rose syrup and add cooked vermicelli and soaked basil seeds, keeping them in the refrigerator. Reserve some soaked Sabja seeds.
To begin with the assembly of Falooda, firstly, layer the bottom of a glass with a generous amount of your favorite fruits. Next, add a sprinkle of soaked Sabja seeds, followed by a layer of colorful jelly. Then, gently pour the prepared rose milk over the fruit and jelly layers. Finally, top it off with a creamy scoop of ice cream and add a drizzle of Rooh Afza for that extra burst of flavor. To make it more visually appealing, garnish it with a handful of nuts, fruits, and jelly on top. If you’re making multiple servings, repeat this same process for all other glasses. And lastly, chill it well and serve!

Ice Cream Falooda
Ingredients
- 3 Cups Milk
- 1 Cup Falooda Sev / Thin Vermicelli
- 2 Tablespoon Basil seeds / Sabza ki beej soaked in water
- 1/2 Cup Rose Syrup or Roohafza My rose syrup has Sugar in it, so I am not using Sugar in this recipe
- 7 Scoop Ice Cream
- Choice of fruits- Chopped Pomogranate, Grapes, Banana. (optional)
- 1 Cup Jelly Can use different colors
Instructions
- Prepare vermicelli as per the instructions on the pack. I am boiling vermicelli in water for 5 minutes and then I am straining and rinsing it in cold water.

- Soak Sabja seeds in enough water for around 30 minutes or more.

- Once they absorb water and a translucent gelatin like coating is formed around them. Drain them.

- Whisk together cold milk and rose syrup. Add cooked vermicelli, soaked basil seeds. Keep in refrigerator.Reserve some soaked sabja seeds.

Assembling Falooda
- Keep all the ingredients ready before assembling falooda

- Layer the bottom of a glass with fruits.

- Add soaked sabja seeds.

- Then top it jelly.

- Gently pour prepared rose milk.

- Top it with a scoop of ice cream

- Drizzle Rooh afza and garnish with nuts, fruits and jelly on top.

- Serve chilled.Repeat the same process for other glasses
