Crunchy Fried Chicken Recipe: Perfect for a Finger-Lickin’ Good Meal
I am excited to share with you one of my all-time favorite dishes – KFC style fried chicken. This dish is loved by many, and it’s no surprise why. With its crunchy seasoned crust and juicy chicken inside, it’s simply irresistible.
What makes this recipe special is the fact that the chicken is well marinated in curd, making it incredibly soft and tender. Dipping the chicken in egg white before coating it with flour helps the flour stick well, and using corn flour in the coating mixture gives the chicken a satisfying crispiness.
The seasoning used in this recipe is well balanced, resulting in a chicken that is even tastier than the KFC original. Trust me, once you try this recipe, you won’t go back to the fast-food version!
One thing to note is that there is more coating flour than you actually need. But don’t throw it away! I refrigerated the remaining flour and used it to coat fish fillets the next day, and they turned out so well. Waste not, want not!

- For a quicker and easier cooking process use boneless chicken.
- Marinate the chicken in the curd and seasoning mixture for at least an hour, or even overnight, if possible, to allow the flavors to penetrate the meat and make it tender.
- When coating the chicken, make sure to shake off any excess flour to prevent the chicken from becoming too dry.
- Use a mixture of all-purpose flour and corn flour for the coating. The corn flour adds a nice crispiness to the chicken.
- Beat the egg until frothy before dipping the chicken pieces in it. This helps the flour mixture stick to the chicken.
- Fry the chicken in hot oil over medium heat to ensure that it cooks evenly and the crust gets crispy.
- Don’t overcrowd the pan when frying the chicken. Fry in small batches to avoid the oil temperature dropping too much.
- Drain the fried chicken on a paper towel-lined plate to remove any excess oil.
- Serve the chicken hot with your favorite dipping sauce. Some popular options are ranch, honey mustard, or BBQ sauce.

Ingredients
Brining Chicken
- 15 pieces Chicken
- Buttermilk or curd
- 1 Teaspoon Black pepper powder
- Salt
Flour mix
- 1 Cup All purpose flour / maida
- 1 Cup Corn flour
- 2 Teaspoon Black pepper powder
- 1 Tablespoon Chilli powder
- 2 Teaspoon Garlic powder you can substitute with garlic paste
- 2 Teaspoon Ginger powder
- Salt
- 1 Tablespoon Paprika powder optional
- 1 Teaspoon Oregano
Egg mixture
- Eggs
- Salt
Dry flour mix
- 1 Cup Plain flour / Maida
- 1 Cup Corn flour
- Salt
Frying
- Oil
Instructions
Chicken Marinade
- In a large bowl marinate chicken with buttermilk or curd, salt and pepper. Overnight brining chicken in buttermilk or atleast minumum of 4 hours will make the chicken juicy and tender.
Dry Mix
- Whisk together plain flour, corn flour, black pepper powder, chilli powder, paprika powder, ginger powder, garlic powder, oregano, salt with plain soda and water
Egg mix
- Prepare egg mixture by beating eggs with salt together.Eggs will help the flour stick better.
Dry mix
- Combine plain flour, corn flour and salt.
Preparation
- Dip marinated chicken pieces first in wet flour mix then in egg mix and again in dry flour mix. Press firmly so that the flour adheres well to the chicken.
- Fry chicken in batches. It will take around 15 minutes for each batch.
- Place on a rack. Repeat the same process to other pieces.
