Vegetable Barley Soup
Ingredients
- 2 Tablespoon Olive oil
- 3 Cloves Garlic Minced
- ½ Cup Beans Finely Chopped
- ½ Cup Potatoes Finely Chopped
- ½ Cup Carrots Finely Chopped
- ½ Cup Green Peas
- 1 Cup Barley Flakes You can replace with oats
- ½ Cup Amaranth seeds Popping Amaranth seeds before using gives a nutty flavour to the soup.
- 3-4 Cups Water
- 1 Cup Vegetable Broth 1 cube vegetable stock can be used instead
Garnish
- Ginger julienne
- Parsley or Coriander
- Spring Onion
Instructions
- Add 2 Tablespoon of oil to a soup pan
- Stir in minced garlic, beans, carrots, and potatoes one by one. Gently toss for 2 minutes in high flame.
- Add Barley flakes and popped Amaranth seeds,
- followed by 3-4 Cups of water
- Now add vegetable stock or cubes and stir to combine.
- Sprinkle some black pepper and salt
- Cover and cook on low flame for 5-7 minutes.
- Squeeze fresh lemon and turn off the flame.
- Garnish with ginger and herbs of your choice.
